Flourless Tortillas: A Delicious, New Way to Enjoy Your Favorite Mexican Dish

Paleo tortillas psyllium husk. Coconut flour is a great way to enjoy a delicious and nutritious meal without worrying about eating unhealthy foods. You can create your paleo tortillas perfect for any occasion by following these simple instructions.

Ingredients:

1/2 cup psyllium husk powder

1/2 cup coconut flour

1/4 teaspoon salt

1 1/2 cups water

Instructions:

1. Whisk together psyllium husk powder, coconut flour, and salt in a large bowl. Slowly add water to the mixture while whisking until a thick batter forms. Psyllium husk powder can be found at Walgreens; you might need to ask someone working there where to find it because it is not in the food section. It’s usually located in the same area as the powdered fiber supplements are. I like to buy the Walmart Great Value brand of coconut flour because it’s more affordable, but you can find these ingredients at most grocery stores. The great thing about coconut flour is that it tastes exactly like corn masa.

2. Place a large sheet of plastic wrap over the bowl and let the batter sit for 30 minutes to allow the psyllium husk to absorb the water.

3. Cut the plastic wrap into 8 equal pieces and use each piece to line a small tortilla press.

4. Scoop 1/8 of the batter into each tortilla press and spread evenly.

5. Close the press and cook the tortillas on a hot griddle or skillet for 1-2 minutes per side, or until golden brown.

6. Serve with your favorite toppings, and enjoy!
